INSTRUCTIONS

  1. In a large saute pan, brown the thawed ground venison until no longer pink. (You can also do this step in the Instant Pot on ‘Saute’ setting) Once the venison is cooked through, remove from heat and place aside.
  2. On the Instant Pot, select the ‘Saute’ setting and add olive oil and onion. Saute for a about a minute, then add garlic to the pot. Continue to cook the onion and garlic by stirring frequently so that the onion does not burn to the bottom. Cook for a couple more minutes until onion appears translucent.
  3. After a few minutes, add diced tomatoes, tomato sauce, tomato paste, beef broth, chili powder, ground cumin, granulated sugar, garlic powder, salt, ground black pepper, kidney beans and bell pepper. Stir until combined.
  4. Add ground venison to the Instant Pot, stir until fully mixed together.
  5. Place lid on top and make sure the release button is closed. Turn on the Chili/Beans setting on the Instant Pot and cook for 20 minutes.
  6. After the 20 minutes is up, release the pressure by pressing the release button on the top of the Instant Pot. DO NOT REMOVE LID UNTIL ALL STEAM AND PRESSURE IS RELEASED.
  7.  Once pressure is fully released, remove lid and serve with toppings of your choosing and enjoy!
