Scalloped Corn

A great CanCooker recipe for Scalloped Corn!



  • 1 can whole kernel corn
  • 1 can cream style corn
  • 1 box corn bread or muffin mix (16 oz)
  • 2 eggs
  • 1 stick butter
  • 8 oz sour cream
  • 24 oz water

Mix ingredients together in a bowl and pour into greased miniature loaf pans. Place rack in the bottom of the CanCooker or CanCooker Jr and add water to the top of the rack (approx 24 oz). Place 2 loaf pans side by side on the rack. Cover and latch lid. Steam for 45 minutes. Remove and let cool.

NOTE:  Only 2 miniature loaf pans will fit in the CanCooker at a time. We use disposable aluminum ones that are 5-1/2″ long by 3-1/2″ wide by 2″ deep.
