Venison Meat Balls

If you're looking for a great meatball recipe or simply to try something new with your ground venison, you've selected the correct recipe. This works with any kind of venison.
In a heavy-bottomed skillet, melt:
1 tablespoon butter
Add and cook until soft, then set aside:
1 tablespoon minced onion
In a large bowl, blend with an electric mixer:
1 cup fresh bread crumbs
1 cup water
Add the onions and:
1 1/2 pound ground venison
1/2 pound ground pork
2 large egg yolks
salt and fresh ground pepper to taste
1/4 teaspoon seasoning salt
Blend at low speed until thoroughly mixed. Using a rounded spoon, form meath mixture into small balls and brown in a large skillet with:
2 tablespoons melted butter
When done, remove the meat balls to a platter and add to the skillet and bring to a simmer:
2 cups venison stock (beef broth will also work)
When the stock is simmering, stir in a little bit at a time until the gravy thickens:
Dark roux
When the gravy is thick, reduce the heat to low, place the meatballs in the gravy and cover until ready to be served.
Serve with garlic mashed potatoes
